Ok, this recipe is obviously not to help you eat better but I am sharing it with you on Valentine’s Day because I love you;)
Disclaimer: Do NOT make these cookies if you lack self-control! They’re addictive, you’ve been warned.
Gluten Free Chocolate Salted Caramel Cookies
1 cup chips
1 1/3 cup Bob’s Red Mill 1 to 1 gluten free flour
1/2 tsp. baking powder
1/4 tsp. baking soda
1 1/4 tsp. sea salt
2 sticks unsalted, grass-fed butter, room temp.
1/2 cup organic cane sugar
1/2 cup raw brown sugar
1 egg
2 tsp. vanilla
Preheat the oven 375 degrees.
In a medium bowl, whisk together all dry ingredients. Set aside.
In a large bowl, cream the butter and sugars until light and fluffy. Add the egg and vanilla. Beat on medium until creamy. Slowly add dry ingredients and mix only until fully combined. Add the chips.
Spoon rounded tablespoons of batter on cookie sheet and bake for 10-12 mins. Cookies should be crisp on the outside but soft and chewy inside.
*Use Lily’s Chocolate Salted Caramel Flavor chips (don’t substitute)
